La Glacerie
A Chandley Compacta ‘bake-off’ oven was put to work
in a purpose-built patisserie production unit. The facility
is part of the La Glacerie operation in Cranbrook, Kent.
La Glacerie was only established in June 1995 and in
that short time its turnover has grown to almost £1
million per year. British Airways were one of number
of customers who quickly became aware of how La Glacerie’s
products would complement their menu. The three deck,
six tray Compacta oven with ultra-steam and 24 hour
clock is a major feature of the new production unit.
It was being used for the production of choux pastry
goods such as eclairs and profiteroles, puff pastry,
lining pastry and varying types of sponge products for
gateaux and pastries etc.
Says La Glacerie’s managing direction,
Martin Dockett, "We went for Chandley in the end on
the strength of their very credible reputation and the
fact that they could design the oven to very specific
needs."
