Riverside
A Tom Chandley oven has been installed at one of London’s
newest restaurants. The Bistro 2 Riverside can be found
at the Oxo Tower Wharf in London’s South Bank and incorporates
a 200-seater restaurant and a 200-seater bar as well
as two takeaway delicatessens. The interior of the restaurant
and bar was designed by Lorenzo Apicella and covers
3500m² with views out over the river. However, if patrons
of Bistro 2 tire of their marine view, they can watch
the Tom Chandley oven being put to good use in the open-plan
kitchen. The oven, a 3 deck, two trays per deck ‘bake-off’
oven, is being used for the restaurant’s pastry requirements,
producing, among other things, sponges, brioche and
quiches.
Head Chef John Dillon has been delighted
with the oven as it gives a consistently even temperature
all round. Rave reviews have been particularly forthcoming
for Mr Dillon’s quiches but he is quick to put this
success down to the cooking properties of the Chandley
oven. John Dillon has worked at the Savoy, the Hyatt
and the Intercontinental where he worked with Chandley
ovens. It was this experience which made him insist
on the installation of the Chandley oven.
